Honestly, you're going to be facing a lot of trouble, Pepsi. Muslim men can marry Christian women (seen as converting a Christian to Islam), but Muslim women risk death by marrying Christian men, as do the spouses, in most parts of the Middle East. If she is of Middle Eastern descent, there may be some conflict with her parents. They probably won't actually kill you, but you can be sure you two will deal with many problems, possibly alienating her from her family (the Middle Eastern culture is very big on public images, and your reputation, as well as the family you are connected to, can be destroyed in a matter of weeks if you do something like marry a Christian man). I'm pretty sure this will extend to dating, too.
I dislike most aspects of the Middle Eastern culture for this reason (and I'm part Arab, so shut up). They're very extreme in most areas, religion being one of the hot topics. I don't know about Islam in other countries, though, so maybe they're less anal about things if they're from a country other than the Middle East.

I don't know if you're planning on marrying her, or simply just to date for now, but don't try anything risque out of wedlock. The Middle East takes intimate contact (not necessarily sexual) very seriously, because, of course, their family's pride and reputation is on the line, and that gives them permission to kill their daughters for being "sluts". Harsh, but true: In my grandparent's neighborhood, about a year ago, a Muslim family lived across from them. If I recall the details correctly, the Muslim daughter was caught kissing a boy from school, and her father nearly strangled her to death (I wish I was kidding). He went to jail, and his family moved back to Jordan.
It may just be my experience, being surrounded by that culture, and bias, but I think it may be best not to mingle in this area. The Middle Eastern culture, as a whole (not just Islam) is very extreme and close-minded, and you put quite a few things on the line for her by dating her. If her parents are not particularly attached to the Middle East, then things may come out alright, but I don't know for sure.
